After many tries, I have finally found my version, and I’m going to share the recipe with you…

Sacher Torte Chocolate Cake with Apricot Filling and Chocolate Glaze

Ingredients
  • For a 26 cm cake tin:
  • - 200 g. of plain flour
  • - 40 g. of bitter cocoa
  • - 100 g. of dark chocolate
  • - 5 egg yolks
  • - 200 g. of unsalted butter
  • - 5 egg whites
  • - 90 g. of white sugar
  • - 30 ml of rum
  • - 100 g. of sugar
  • - 16 g. of baking powder
  • - 125 g. of icing sugar
  • - 1 pinch of salt
  • - 70 g. of marzipan
  • For the syrup:
  • - 25 g. of sugar
  • - 25 ml of water
  • - 2 tablespoons of rum
  • For the chocolate glaze:
  • - 175 g. of water
  • - 225 g. of white sugar
  • - 4 sheets of leaf gelatine
  • - 150 g. of fresh cream
  • - 75 g. of bitter cocoa
